MURGH E MUSALAM - EID SPECIAL DISH
Murgh means Chicken, and Musallam means whole in Farsi/Persian. I am sharing this recipe which I have learned from my Mom. She makes this dish only for very special occasion or very special guests. I have heard that this dish was made for Kings, Sultans and Dukes back then.
Ingredients:
Chicken 1 whole skinless
Yogurt 2 cups (for best result use Greek yogurt)
Garlic Paste 2 to 2 1/2 tsp
Ginger Paste 11/2 to 2 tsp
Salt 3/4 to 1 tsp
Black Pepper Powder 1/2 tsp
Red Chili Powder (hot) 3/4 to
Lemon Juice 2 tbsp
Cumin Powder 3/4 to 1 tsp
Coriander Powder 3/4 to 1 tsp (optional)
Turmeric Powder 3/4 tsp
Oil 1/2 to 3/4 cup
Ingredients for Stuffing:
Raisins 1/2 to 3/4 cup
Almonds 1/2 cup (slivered)
Onion 1 large sliced and fried
A Piece of twine to tie up the chicken legs.
