I crave garlic Parmesan chicken all the time and these loaded fries really hit the spot 😋
INGREDIENTS
- 2 potatoes, sliced into fries
- 1 tsp salt
- 1 tsp paprika
- 1 tbsp olive oil
- 200ml vegetable oil
- 1 tsp garlic salt
- 500g chicken, diced into big cubes
- 2-3 tbsp cornflour
- 1 egg
- 2 tbsp butter
- 3 cloves garlic
- handful chopped parsley
- 1/2 tsp chilli flakes
- 50g Parmesan
- Ranch dressing
METHOD
- Add potato slices to air fryer with salt, paprika and olive oil, shake to combine
- Cook fries at 185 degrees for 20 minutes in the air fryer
- Meanwhile, coat chicken in garlic salt, egg and cornflour
- Add vegetable oil to a pan on high heat and add in chicken pieces (do in two batches if too full) fry on each side for roughly 4 mins each or until golden on each side
- take out of oil and set aside on paper towel or on a plate to dry for a couple mins
- Make the garlic butter by combining melted butter, minced garlic, parsley and chilli flakes
- Toss the butter with the chicken, add Parmesan and serve over the finished fries
- Top with ranch and enjoy!
