Chinese Sweet Potato Ginger Dessert Soup is spiced with the heat of ginger and scented with the fragrance of pandan leaves. There are all kinds of sweet potatoes, some white fleshed, some purple, some orange and yellow fleshed. In this recepi I'm using 'Honey Sweet Potatoes'. It is also known as 'Ubi Cilembu'. The inner flesh is light yellow and the color becomes more pronounced when it is cooked. Use old ginger, the more spicy, which is exactly what you need for this soup. Slab sugar is a traditional chinese brown sugar that is very little refined. Slab sugar gives the dessert soups that extra boost of intense flavor and a glossy sheen. But in this recepi I'm using Organic Molasses Sugar since I can't get slab sugar. The unique nutritional profile of sweet potatoes makes them powerful allies in preventing disease and supporting overall health. They are a good source of fiber which make them excellent for digestion:- • Rich in beta-carotene (Vitamin A), a major antioxidant. • Good source of magnesium, a mineral which helps to de-stress and promotes relaxation and calmness. • Even though sweet potatoes are naturally sweet, they have a low glycemic index and do not cause a sugar spike. Their natural sugars are slowly released into the bloodstream. • Good source of vitamins E and C. Vitamin C helps ward off colds and flu viruses. Give a try! Ingredients 400gm Honey Sweet Potato or any Sweet Potato 1/2 inch old ginger - lightly bruised to release juice. 1/2 cup slab sugar / molasses sugar. 2 Pandan leaf - knot 2 1/2 cup water Bahan-bahan 400gm Ubi Keledek Madu atau sebarang Ubi Keledek. 1/2 inci Halia tua 1/2 cawan gula 2 helai daun pandan disimpul 2 1/2 cawan air #sweetpotatogingersoup #supkeledekhalia
