Always, Sheena ____________ Music: Bright Idea Camera: Canon 600D Video Editor: iMovie ____________ Pan de Coco Recipe Ingredients: for the dough 1 cup warm milk (105-115F) 2 and 1/4 tsp active dry yeast 1 large egg 1/4 cup softened butter 1/4 cup sugar 4 cups all-purpose flour 1 large egg for egg wash pan de coco filling 1 cup coconut milk 2 cups freshly grated coconut 3/4 cups brown sugar pinch of salt Instructions: for the dough 1. In a mixing bowl, add warm milk. Sprinkle the yeast and a tbsp of the sugar. Let the mixture stand for 5 to 10 mins or until the foam forms on the surface. 2. Add the eggs, softened butter, the remaining sugar, and salt. Stir everything well. 3. Add 4 cups of all-purpose flour gradually, in between stirring just until the dough gathers in the center of the bowl. 4. Turn the dough over on a floured board. Start to knead the dough with your palm for 6 to 10 mins until the dough is smooth and elastic. Shape the kneaded dough into a ball and place it in a bowl. Cover the bowl and let the dough rise at room temperature for 1 and 1/2 hours. 5. After the dough has risen, deflate and divide into 18 to 20 portions. Flatten each circular portion with your palm. Spoon 1 tbsp of pan de coco filling in the center of the dough. Fold and close the dough, shape it into a smooth ball and seal the ends. Repeat with all the other portions. 6. Place seam side down on a greased baking tray, 1 inch apart. Cover with kitchen towel and let it rise for 1 hour at room temperature. for Pan de coco filling 1. Pour coconut milk in a pan over medium heat. Once it starts simmering, add the brown sugar. Stir until completely dissolved. 2. Add grated coconut and pinch of salt. Stir occasionally until liquid is reduced. Remove from the heat and let it cool. for baking 1. Preheat the oven at 375F, 20 minutes before the dough rolls finish rising. Prepare the egg wash in a small bowl, mix thoroughly. 2. Using a fork, poke small holes in the center of each filled dough. 3. Carefully brush the rolls with the egg wash. 4. Bake for 20 to 25 minutes until the top turns light brown. 5. Let the bread cool completely before removing from the baking tray.
