#ddukmanduguk#tteokmanduguk#떡만두국 HOW TO MAKE DUMPLING RICECAKE SOUP Ddukmanduguk or Tteokmanduguk (dumpling rice cake soup or ricecake with dumpling:만두) is a delicious soup with mandu (Korean dumplings and disc-shaped rice cake soup) Koreans always eat it on Seollal (Korean New Year’s Day), the first day of the Lunar calendar and one of the most important holidays in Korea. Classical version of rice cake soup is used with a beef broth, but we can use any meat you prefer, or use seafood, or just make an anchovy stock or kelp stock. But this soup is not just for special occasions. Nowadays we may eat it anytime, because it’s delicious and easy to make! It’s a one bowl as heavy meal. For this recipe, I use kelp broth to make it fast and easy. Enjoy the recipe! Ingredients (for 2 servings): 1L of water 1 small piece of kelp 400g sliced dduk or tteok ricecake (If frozen, soak it in cold water for 30 minutes and drain before using) 4 pieces of frozen mandu (you may more) 1 large green onion (or 3 green onions), sliced thinly 1/2 onion, sliced 1 green chili, chopped(optional) 1 egg 1/2 tablespoon of minced garlic 2 tablespoons fish sauce 1 tablespoon soup soy sauce 1/2 teaspoon ground black pepper *salt (you may add according to your taste) Toppings (optional) 1 sheet of dried seaweed paper (gim aka nori) Recipe: 1. Bring the water to a boil in a pot or pan over high heat and add kelp and 2 tablespoons of fish sauce. 2. While waiting for the water to boil, chop the large green onion, green pepper and onion. 3. Beat an egg, add ground black pepper and stir it. 4. When the water is boiling, remove the kelp out then add the dumplings and onion to the boiling soup along with 1 tablespoon soup soy sauce. Stir it. 4. Add the rice cake slices to the boiling soup. Let it cook for 7 to 8 minutes until all the rice cakes are floating and are softened. 5. While cooking the rice cake, put the garlic, green chili and green onion. 6. After 7-8 minutes, pour the egg little by little into the soup and cook it for 30 seconds. 7. Stir the soup. Remove from the heat and ladle the rice cake soup into individual serving bowls. 8. Serve it with kimchi and other side dishes if you want. Enjoy watching & Happy cooking!
