Mother's Day carrot cake with greek yogurt frosting

I thought I'd share this slightly healthier version of carrot cake in case anyone out there is looking for a baking idea to impress their loved ones on this Mother's Day! In this version, I am using less sugar and vegetable oils only. And the greek yogurt frosting is such a surprise addition to balance out the sweetness of the cake.
