This is for the cast iron skillet) ¼ cup Cornmeal 3 tbsp Raw sesame seeds (May omit if desired) ¼ cup Warm water (For lightly applying to top of formed dough) 1 tbsp Cane sugar 1 tsp Salt 2 ½ tsp Active yeast 1 ½ cups Warm water 1 cup Spelt flour 2 ½ cups Bread flour INSTRUCTIONS: 1. Combine water, yeast and sugar in a bowl and set aside 2. Combine both bread flour, spelt flour and salt in a large mixing bowl. 3. Mix dry ingredients together 4. Pour water mixture into dry mixture and stir to combine. If using stand mixer, no need to stir ingredients together first. 5. Knead dough for roughly 5 minutes. 6. Place dough in oiled large bowl to rest for roughly 1-3 hours. Cover bowl tightly with plastic wrap. 7. Place cast iron skillet, empty, on lowest rack in oven. Place pizza stone on upper rack. Preheat oven to 475 F. 8. Remove dough from the bowl and gently fork bread shapes on large flour dusted surface. Cover loosely with plastic wrap and allow to rest while oven is preheating. 9. Remove pizza stone from oven and dust lightly with corn meal. Place shaped dough on cutting board. 10. With a pastry brush, carefully lightly water the top of all the bread shapes. If desired, sprinkle raw sesame seeds on top. 11. Place pizza stone back in the oven. Take pitcher of cold water and carefully pour into cast iron skillet and immediately shut oven door. Cook for 25-35 minutes. 12. Remove from oven and allow to rest for at least 5 min. Enjoy!
